  Centuries ago, man discovered that removing moisture from food helps to store it, and that the easiest way to do this is to expose the food to sun and wind.
All foods including water — cabbage and other leaf vegetables contains as much as 93% water, potatoes and other root vegetables 80%, lean (瘦的) meat 75% and fish, anything from 80% to 60%, depending on how fatty it is. If this water is removed, the activity of the bacteria which cause food to go bad is controlled.
Nowadays most foods are dried mechanically. The conventional method of such dehydration (脱水) is to put food in chambers (室) through which hot air is blown at temperature of about ll0'C at entry to about 43'C at exit. This is the usual method for drying such things as vegetables, minced meat, and fish.
Liquids such as milk, coffee, tea, soups and eggs may be dried by pouring them over a heated steel cylinder (圆筒), then put them into a chamber through which a current of hot air passes. In the first process, the dried material comes off the roller (滚筒) as a thin film which is then broken up into small, though still relatively flakes (薄片). In the second process it falls to the bottom of the chamber as small powder. Where recognizable pieces of meat and vegetables are required, as in soup, the ingredients (成分) are dried separately and then mixed.
Dried foods take up less room and weigh less than the same food packed in cans or
frozen, and they do not need to be stored in special conditions. For these reasons they
are invaluable to the climbers, explorers and soldiers in battle, who have little storage
space. They are also popular with housewives because it takes so little time to cook

On Saturday, Feb 12, 2000, two things happened that changed my life.
First of all, my baby sister got married. She was 26 this day, and yet to me she was still my baby sister.

I had lost so many things on that day. My innocence had slipped away like a thief in the night. It was gone before I could do anything about it, taking with it all the treasures that I had held in my heart. I felt myself grow up in an instant. I saw, for the first time, what I really was – a 30-year-old woman with a husband of my own, and soon, a child of my own.
I took a deep breath and stood up from the bench. I turned and headed back to the hall, hoping I hadn’t missed the cutting of the cake. It was the day that my sister grew wings of her own and left the nest – the day that Lucy died, and I was born.

Several years ago, I worked as a truck driver for a company. On Saturdays I usually spent several hours doing something to keep my truck in good condition.

Car Talk
When I got the driving license last summer, Mom and I took our first trip around an empty parking lot. Then I found that my mother was not the best teacher for me. It wasn't that she shouted, or told me that I was doing poorly. As you can imagine, my mother's "helpful instructions" only managed to make me more nervous.
Since I could no longer practice with her, the job was placed in the hands of my father. The idea of learning from Dad was not one that thrilled me. I loved him dearly, but I just did not see Dad as someone I could be comfortable learning from. He almost never talked. We shared a typical father-daughter relationship. He'd ask how school was, and I'd say it was fine. Unfortunately, that was the most of our conversations. Spending hours alone with someone who might as well have been a stranger really scared me.
As we got into the car that first time, I was not surprised at what happened. Dad and I drove around, saying almost nothing, aside from a few instructions on how to turn. As my lessons went on, however, things began to change. Dad would turn the radio up so I could fully appreciate his favorite Stones music. And he actually began talking. I was soon hearing about past failed dates, "basic body" gym class, and other tales from his past, including some of his first meeting with Mom.
Dad' s sudden chattiness was shocking until I thought about why he was telling me so much in the car. In all the years that I had wondered why my father never spoke that much, I had never stopped to consider that it was because I had never bothered to listen. Homework, friends, and even TV had all called me away from him, and, consequently, I never thought my quiet father had anything to say.
Since I began driving with him, my driving skill has greatly increased. More important, though, is that my knowledge of who my father is has also increased. Just living with him wasn't enough—it took driving with him for me to get to know someone who was a mystery.
