The sleepy-eyed toddler who called for the iPhone is one of hundreds of iPhone-loving toddlers whose parents are often proud of their offspring's ability to slide fat fingers across the gadget's screen and pull up photographs of their choice.

Many iPhone apps on the market are aimed directly at preschoolers, many of them labeled "educational," such as Toddler Teasers: Shapes, which asks the child to tap a circle or square or triangle; and Pocket Zoo, which streams live video of animals at zoos around the world.

Along with fears about dropping and damage, however, many parents sharing iPhones with their young ones feel guilty.They wonder whether it is indeed an educational tool, or a passive amusement like television.The American Academy of Pediatrics is continually reassessing its guidelines to address new forms of "screen time." Dr.Gwenn Schurgin O'Keeffe, a member of the academy's council, said, "We always try to throw in the latest technology, but the cellphone industry is becoming so complex that we always come back to the table and wonder- Should we have a specific guideline for them?"

Tovah P. Klein, the director of a research center for Toddler Development worries that fixation on the iPhone screen every time a child is out with parents will limit the child's ability to experience the wider world.

As with TV in earlier generations, the world is increasingly divided into those parents who do allow iPhone use and those who don't. A recent post on UrbanBaby.com, asked if anyone had found that their child was more interested in playing with their iPhone than with real toys. The Don't mothers said on the Website: "We don't let our toddler touch our iPhones ... it takes away from creative play." "Please ... just say no. It is not too hard to distract a toddler with, say ... a book."

Kathy Hirsh-Pasek, a psychology professor who specializes in early language development, sides with the Don'ts. Research shows that children learn best through activities that help them adapt to the particular situation at hand and interacting with a screen doesn't qualify, she said.

Still, Dr. Hirsh-Pasek, struck on a recent visit to New York City by how many parents were handing over their iPhones to their little children in the subway, said she understands the impulse (冲动). "This is a magical phone," she said. "I must admit I'm addicted to this phone."

As Apple tries to maintain its growth and success in China, the world's largest smart-phone market is becoming even more critical. Apple's shares(股份) fell sharply as the company's earnings for the holiday quarter through December disappointed investors.

The sales of the iPhone, which include both the iPhone 5 and older models, came in at the low end of analysts' expectations, while the company's income plan for the second quarter was below analysts' forecasts, though Apple is known to give conservative (保守的) forecasts.

Some analysts have said that for Apple to regain its growth, the company needs a more aggressive strategy(进攻型策略) for markets, or more specifically for China, where the market for smart phones has been expanding more rapidly than anywhere else. In China, demand is particularly great for inexpensive phones that run on Android(安卓) operating system, sold by many Chinese phone makers as well as South Korea's Samsung Electronics Co.

But Apple says it's already enjoying strong growth in China. "We saw big growth in iPhones," Chief Executive Tim Cook said. He said that the company has been quickly expanding its sales channels in China, including the number of Apple stores. "This isn't nearly what we need, we're not even close to that, but we're making great progress.” he said.

In China, a big missing piece for Apple is China Mobile Ltd. , the biggest local telecom carrier that doesn't yet sell the iPhone. Earlier this month, Mr. Cook met China Mobile Chairman Xi Guohua in Beijing and discussed cooperation, stirring hopes that the world's largest mobile carrier may soon start offering the iPhone.

Earlier this month, the Wall Street Journal reported that Apple is working on a lower-end iPhone that could launch as early as this year. But one possible challenge for Apple in China is that low-priced Android-based phones are getting better in terms of quality. A report from CLSA in late November showed that many smart-phones sold at about1,000 yuan ($160) came with higher- resolution screens, better cameras and more powerful processors than phones at that price did a year earlier.

When I was in my early twenties, I moved away from my home state of Wisconsin to attend graduate school. I chose to go to the University Of Arizona in Tucson and   36   there. Famous as “the king of chefs and the chef of kings,” Auguste Escoffier helped raise the position of cooking from a laborer’s task to an artist’s job. Escoffier was born on October 28, 1846, in the small village of Villeneuve-Loubet, near Nice, France. Among the key figures in the boy’s life was his father, who worked primarily as a blacksmith(铁匠). His grandmother, an enthusiastic cook, was perhaps more responsible than anyone for introducing the boy to an appreciation of the delights of cooking.

Young Escoffier attended the local school until age 12, upon which time his father thought it necessary that the boy learn a trade. This was the owner of Le Petit Moulin Rouge, one of the finest restaurants in Paris, where Escoffier was to become a sous-chef, ranking below the head chef. After three years in this position, he rose to the level of head chef, wearing the respected chef’s hat.
